  1. 1Use day-old cooked rice (or cook and cool rice ahead of time).
  2. 2Heat vegetable oil in a wok over high heat.
  3. 3Scramble eggs, break into pieces, set aside.
  4. 4Stir fry peas, carrots, and garlic for 2 minutes.
  5. 5Add rice, soy sauce, and sesame oil. Toss 3-4 minutes.
  6. 6Return eggs, add sliced green onions. Toss and serve.
